Abstract. Eighteen cultivars of celeriac were analysed in terms of content of furanocoumarins, using GC/MS. In the tissue the analysed celeriac xanthotoxin, bergapten and isopimpinellin were identified. The largest content of total furanocoumarins was found in the ‘President’ cultivar (30 μg·100 g-1 of fresh tissue) and the ‘Luna’ cultivar (28 μg·100 g-1 of fresh tissue). Total content of furanocoumarins occurring in the examined cultivars of celeriac does not pose a threat to human health.

The content of furanocoumarins in celeriac

Summary

It is known that celery contains furanocoumarins, a group of photomutagenic and photocarcinogenic substances. Eighteen cultivars of celeriac (‘Jabłkowy’, ‘Odrzański’, ‘Makar’, ‘Brilliant’, ‘Diamant’, ‘Gol’, ‘Luna’, ‘Mentor’, ‘Monarch’, ‘Cascade’, ‘Feniks’, ‘Edward’, ‘President’, ‘Prinz’, ‘Snehvide’, ‘Cisko’, ‘Dukat’, ‘Talar’) were analysed in terms of their content of furanocoumarins, using GC/MS.

In the tissue of the analysed celeriac xanthotoxin, bergapten and isopimpinellin were identified. The largest content of total furanocoumarins was found in the ‘President’ cultivar (30 μg·100 g-1 of fresh tissue) and the ‘Luna’ cultivar (28 μg·100 g-1 of fresh tissue). The content of xanthotoxin. and bergapten was similar, in all the studies cultivars and ranged: 7.6 and 8.8 μg·100 g-1 of fresh tissue respectively. Isopimpinellin was found in roots of six cultivars of celeriac: ‘Makar’, ‘Brilliant’, ‘Monarch’, ‘Feniks’, ‘President’ and ‘Prinz’. Total amount of furanocoumarins occurring in the examined cultivars of celeriac does not pose a threat to human health.
